Ingredients:

  • 500 g green beans, trimmed

  • 50 g butter

  • 1 small garlic clove, finely chopped

  • Zest of 1 lemon

  • ¼ cup flaked almonds, toasted

  • Sea salt to taste

Method:

  1. Bring a large pot of salted water to the boil. Add beans and blanch for 2–3 minutes, then plunge into iced water to keep them bright green.

  2. In a pan, melt butter with garlic and lemon zest until fragrant.

  3. Add the beans and toss until warmed through. Sprinkle with toasted almonds just before serving.

A bright, crunchy side that pairs beautifully with seafood or roast chicken.
