Ingredients:

1 medium cauliflower, cut into florets

1 tbsp butter

1 tbsp plain flour

1½ cups full-cream milk

½ cup grated vintage cheddar

¼ cup grated parmesan

½ cup fresh breadcrumbs

2 tbsp olive oil or melted butter

Pinch nutmeg, salt & pepper
Method:

Steam or boil cauliflower until just tender. Drain well.

In a saucepan, melt butter, stir in flour and cook for 1 minute. Gradually whisk in milk until smooth.

Stir in cheddar, parmesan and nutmeg. Season to taste.

Pour over the cauliflower in a baking dish. Top with breadcrumbs mixed with olive oil or butter.

Bake at 190 °C for 25 minutes until golden and bubbling.
