Ingredients:

  • 1 medium cauliflower, cut into florets

  • 1 tbsp butter

  • 1 tbsp plain flour

  • 1½ cups full-cream milk

  • ½ cup grated vintage cheddar

  • ¼ cup grated parmesan

  • ½ cup fresh breadcrumbs

  • 2 tbsp olive oil or melted butter

  • Pinch nutmeg, salt & pepper

Method:

  1. Steam or boil cauliflower until just tender. Drain well.

  2. In a saucepan, melt butter, stir in flour and cook for 1 minute. Gradually whisk in milk until smooth.

  3. Stir in cheddar, parmesan and nutmeg. Season to taste.

  4. Pour over the cauliflower in a baking dish. Top with breadcrumbs mixed with olive oil or butter.

  5. Bake at 190 °C for 25 minutes until golden and bubbling.
