Ingredients:

  • 3 medium beetroots, roasted, peeled & sliced

  • 100 g feta cheese

  • ½ cup walnuts, toasted

  • Handful of baby spinach or rocket

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp Dijon mustard

  • Salt & pepper

Method:

Whisk dressing ingredients together. Layer beetroot, spinach, feta and walnuts. Drizzle with dressing just before serving.
