Sticky Sweet Chilli Beef Lettuce Cups

Ingredients
  

  • 500 g Budd’s Grass Fed Free Range Regular or Lean Beef Mince
  • 2 tsp sesame oil
  • 2 cloves garlic crushed
  • 2 tsp fresh ginger grated
  • 1 small brown onion finely diced
  • 1 red capsicum finely diced
  • 3 tbsp sweet chilli sauce
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame seeds
  • 2 spring onions finely sliced
  • 1 small cos lettuce leaves separated
  • Fresh coriander leaves
  • 1 lime cut into wedges
  • Optional: sliced red chilli for extra heat

Instructions
 

  • Heat the sesame oil in a large frying pan over medium-high heat.
  • Add the onion and cook for 2–3 minutes until softened. Stir in the garlic and ginger and cook for another minute.
  • Add the Budd’s Grass Fed Free Range Beef Mince and cook until browned, breaking it up as it cooks.
  • Stir through the diced capsicum and cook for another 2 minutes.
  • Add the sweet chilli sauce, soy sauce and oyster sauce, stirring until everything is well coated and glossy.
  • Remove from the heat and stir through the spring onions and sesame seeds.
  • Spoon the beef mixture into crisp lettuce cups and top with fresh coriander, sliced chilli if using and a squeeze of fresh lime.
  • Serve immediately.

Notes

For extra crunch, top with crushed roasted peanuts or crispy fried shallots.
Serve with steamed jasmine rice if you’re after a more substantial meal, or enjoy as a light dinner, quick lunch or easy entertaining option.
