Best Ever Beef Burgers

Ingredients
  

Burgers

  • 4 Budd's 150g grass fed free range beef burgers
  • 4 slices Budd's house smoked bacon cut in half so you have 8 pieces of bacon
  • 4 slices colby or burger cheese
  • 1 red onion sliced into 1cm thick rings
  • 8 sandwich stacker burger pickles
  • 1 baby cos lettuce
  • 8 tablespoons home made burgher sauce see below
  • 4 freshly baked bakery burger rolls

Burger Sauce

  • 3/4 cup whole egg mayonnaise
  • 1 tbsp tomato ketchup
  • 1 tbsp American yellow mustard
  • 1 tbsp seeded mustard
  • 2 tbsp sweet gherkins finely chopped Note 3
  • 2 tsp gherkin juice from the pickle jar (Note 4)
  • 2 tsp white sugar
  • 1/2 tsp white wine vinegar Note 5
  • 1/2 tsp paprika
  • 1/2 tsp garlic granules or 1/4 tsp garlic powder
  • 1/2 tsp onion powder

Instructions
 

  • Sauce
  • To make the sauce, mix all ingredients together in a bowl and taste - add salt and pepper of required. Transfer to a jar or a container with a sealed lid - You can keep what you don't use in the fridge for next time!

Now make the burgers

  • Heat a BBQ grill to a high heat.
  • Flatten the burgers on a piece of grease proof paper to so they are roughly the same size as you burger buns - Don't flatten them on the heated pan or BBQ as it squeezes the moisture out!
  • Spray the burgers with a little olive oil (or pat them with oil) and season with salt and pepper as you would a steak
  • Cook to your liking (roughly 2 minutes each side, remove from the heat, place a slice of cheese on each and cover with foil to rest. While the burgers are cooking pop the onion rings not he grill as well and char slightly on each side.
  • Now cook the bacon and when cooked to your liking place the bacon on top of the cheese topped burgers and place a couple of onion rings on each each burger
  • Keep the pan or bbq warm and place the buns (flat side down), and lightly toast.
  • To assemble your burger, place a table spoon (or more if you like) of burger sauce on the bun base and bun lid, add the pickle slices to the base, top with the burger stack, a lettuce leaf and lid - Add a skewer to hold it all togther and enjoy!
