🥇 One Pan Mexican Beef & Rice Bake

Ingredients
  

  • 1 kg Budd’s Grass Fed Free Range Beef Mince
  • 1 tbsp olive oil
  • 1 brown onion diced
  • 3 cloves garlic crushed
  • 1 red capsicum diced
  • 1 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 1/2 tsp chilli flakes optional
  • 2 tbsp tomato paste
  • 400 g can diced tomatoes
  • 2 cups beef stock
  • 1 cup long grain rice
  • 1 cup corn kernels fresh, frozen or canned
  • 400 g black beans drained and rinsed
  • 2 cups grated tasty cheese
  • Salt and freshly cracked black pepper
  • Fresh coriander sliced spring onions, avocado and sour cream to serve

Instructions
 

  • Heat the olive oil in a large ovenproof frying pan or casserole dish over medium-high heat.
  • Add the onion and capsicum and cook for 4–5 minutes until softened. Stir in the garlic and cook for another minute.
  • Add the Budd’s Grass Fed Free Range Beef Mince and cook until browned, breaking it up with a wooden spoon.
  • Stir through the cumin, smoked paprika, oregano, coriander, chilli flakes and tomato paste. Cook for 1–2 minutes until fragrant.
  • Add the diced tomatoes, beef stock and uncooked rice. Stir well and bring to a gentle simmer.
  • Cover and cook over low heat for 18–20 minutes, stirring occasionally, until the rice is almost tender.
  • Fold through the corn and black beans and season with salt and pepper to taste.
  • Sprinkle the grated cheese evenly over the top.
  • Place under a hot grill for 4–6 minutes until the cheese is melted, bubbling and lightly golden.
  • Serve topped with fresh coriander, sliced spring onions, avocado and a dollop of sour cream.

Notes

This recipe is a fantastic way to make the most of your FREE 1kg of Budd’s Grass Fed Free Range Beef Mince. It’s a hearty one-pan family meal with minimal washing up and plenty of leftovers for lunch the next day.
For extra heat, add fresh jalapeños or your favourite hot sauce before serving.
It also freezes beautifully, making it perfect for meal prep or busy weeknight dinners
