Preheat a barbecue or char-grill on high. Cook on the barbecue for 5 minutes each side. Reduce heat to medium-low and cook, covered, for 10 minutes for medium, or until cooked to your liking. Transfer to a plate. Allow lamb to rest before slicing.
Place lamb in a large roasting pan. Season lamb to taste. We recommend olive oil, garlic, rosemary salt and pepper. Roast for 45 minutes or until cooked to your liking. Allow lamb to rest before slicing.
